Mole Pepper

Pasilla means "little raisin" in Spanish, referring to the dark brown color and raisin-like aroma of the dried Pasilla pepper. With its rich, smoky flavor and medium sharpness, the dried Pasilla pepper is often used in Mexican mole sauces. The green Pasilla peppers are also used in dishes and then called Chilaca.
